Previous post are very likely. However, I would check the functionality of the emergency brake. It may be sticking/not releasing completely and me need service.

If they didn't do it before the installation of wheel cyls. and bearings, then one of the two is the problem. You don't mention if you are losing break fluid becouse wet brake shoes will lock up. This is where I suspect you have your problem. The only way to check is to pull the rear wheels and drums and do a visual inspection." Recently recieved new" sounds like second hand news from the seller and should be checked out, Its also strange that the rear shoes wern't changed when the cyls were. good luck hjope this helps

Grabbing rear brakes usually indicates oil or brake fluid on the brake linings/shoes--whoever did the wheel cylinders may have gotten fluid or grease on the shoes and did not clean them off good. I would take it back to the shop and have them check the shoes for this.

air in the lines would tend to be spongy brakes not grabby brakes. it sounds like it has drum brakes on the rear? If so, the shoes might not be adjusted properly or have worn improperly. If you are not mechanically inclined it should be relatively simple at a brake shop. if you are mechanically inclined buy a service manual and follow the procedure for adjusting the shoes.
