When the ball goes through the basket. It could be a lay-up, jump-shot, three-pointer, or dunk; they're all field goals. Free throws are the only way you can score and have it not counted as a field goal.

A field goal is a basket scored during open play, i.e., all baskets scored that are not a free throw. It could be a normal 2 pt shot, a 3 pointer, a dunk, a lay up, even a shot from halfcourt, as long as it's not a free throw.

Shots that go in the basket, except free throws. Field goal percentage is the number of shots that went in, over the number of shots attempted.
