Not a great cook but I want to prepare something special that's not to hard...

Steak or chicken are both easy. Personally, if I came home and my hubby had cooked me dinner, I would be so preoccupied with the gesture alone that the actual meal would be secondary.

Tenderloin is great and easy to cook! Most grocery stores will have pork tenderloin that is pre-packaged and marinated......mmmmmmmmm. Anyway, what you want to do is "sear" the meat before you put it in the oven. Get a large frying pan or something and heat it over medium high heat. Once the pan heats up, place the tenderloin in the pan and "sear" for about 30 seconds - make sure you do this on the top, bottom, and the sides. You may find that the meat sticks to the pan - don't worry, this is normal. Use a spatula and tongs to flip it. Once you have done this, wrap it very loosely with tin foil and place in a cake pan or on a cookie sheet. Bake in the oven at about 300 degrees for approximately 2 - 2 1/2 hours.
Add rice or baked potato as a side (don't forget the vegetable - salad is good) and voila! you have a meal any one would love - especially your wife!

I have the perfect solution for you. I do this all the time and it is very easy to cook. First get some Minute rice. That's easy enough, right? Only when you make it add a little chicken broth or a chicken boyon cube, and a little butter. They only other thing you need is 2 or 3 chicken boneless, skinless chicken breasts. Cut the chicken into small pieces. Put a little oil in a skillet and start cooking away. I always add a little seasoning to my chicken. A little cyanne pepper or Old Bay seasoning goes a long way when it comes to taste. If your chicken starts to stick just add a little water in the pan. Other spices include: Salt, Pepper, Sasone(spanish seasoning), Soy sauce, cyanne pepper. I myself add just a little of everything, stir and cover with a lid for about 5 to 10 minutes. Trust me, you can't mess this one up, and she will think you are a gourmet chef or something. LOL!

Here you go: Simple Italian Classics (use the internet for these simple recipes she will love).
1. Mozzarella Caprese Salad (simple, looks great, seems fancy - made-up of Fresh Mozzarella, Tomatoes, Basil, and extra virgin olive oil (make sure you use extra virgin!!!) - slice the fresh mozz and tomatoes and chop the basil add the olive oil just before serving (and balsamic vinegar if you would like) you can also add some salt and pepper if you want.

2. Make some pasta - keep it light by simply using some of the extra virgin olive oil and grated parmasean cheese as your sauce or use some pre-made spagetti sauce (if you get your spag sauce from a jar make sure you doctor it up a bit to make it better than jar stuff. How? Add some minced garlic or garlic salt and chop a half of tomato and mix it in. Also, add in some extra virgin olive oil. These items will make a stale jar sauce taste fresh and more like home made.

3. Chicken with Buerre Blanc - Fancy name for chicken with butter sauce (Buerre Blanc). Recipes for Buerre blanc vary, but to keep it simple I would simply take 1/4 cup of white wine and the juice of 1/2 lemon (or a teaspoon of lemon juice) and heat it up until it reduces to about 1/2 its original volume. Then chop two sticks of unsalted butter and slowly add them to the reduced lemon/white wine mixture. do this under medium-low heat so that you don't burn the butter. When the Buerre Blac is finished, don't let it sit too long or it will break. Bake the chicken or grill it. Put the buerre blanc on the chicken and sprinkle on a couple of capers (for look and taste - no capers? you could also slice some kalamata olives and put those on top)

4. Your side should be asparagas or green beans (french green beans if you can find them) - Here's a trick with these: put them in a bowl, put a couple of ounces of water in the bowl and a little bit of lemon juice; slap a little butter on top of the asp/beans and throw them in the microwave for three minutes. Done.

5. For Dessert you can put some mixed berries in a martini glass and hit it with some whipped cream or hersheys chocolate sauce or both!!!

5 course meal - so easy - the main concern is the buerre blanc - find a recipe you can handle or see if you can find a prepackaged version.

Want to make it easier? Serve BBQ chicken, but use some sort of fance BBQ sauce like a citrus flavored sauce. Make sure you allow your chicken to marinate in the sauce overnight. Then spread more on top while grilling.

stuffed chicken is easy and only takes 4 basic ingredients-chicken, stuffing mix(prep as per box instructions) cheese, and cream soup. Cut chicken breast to make a pocket for the stuffing, fill it, top w/ cream soup(add 1/2 can milk to soup mix well) and cheese. Bake covered @ 350 for 30-45 mins or until done. Serve w/ veggie of choice

definitely go with the steak on the grill thing the guys have going below! It's done nicely medium rare when you press on it and it's the same elasticity of the space between your thumb and pointer. Also, throw some sliced zucchini sprayed with oil and seasoned with Adobo on grill till slightly tender - yum!! bon appetite romeo!

Pasta is always easy to make. And the best part about pasta is that you can add sauce and herbs to make it look fancy. You could have an italian theme. Light some candles, make garlic bread as a appetizer.

If you cook anything like I do, first thing you have to do is make sure the fire extinguishers are filled and in proper working order. Then check your homeowners insurance to make sure it's up to date. As far as cooking, you don't want to get any other advice from me. Have fun.

Will she come with you? You could have a Happy Birthday message announced over the loudspeaker. Then take her out for a romantic dinner afterward. Somewhere she always wants to go, but you always want to go to mexican food or something.
