It depends what you mean by "care."
If you do well, it could make you look a little better than another applicant who took none. However, I wouldn't take AP classes just because you think it will look good on your applications.
The benefit to AP classes is that if you do well (4's or 5's) you can get out of certain core requirements. Considering how much college costs, this is a good deal.
There is no key number of APs to take. Don't take AP US History if you're horrible in that subject and will get bad grades and a low score on the exam. If you're a whiz in English, math, and science, then try your luck at each of these. If you're just an average student, then you might want to try challenging yourself in your best subject.

For private colleges, it may be a factor for gaining admissions. They want the best students and having stellar score will sure boost your desireability ( scores of 4 and 5). For public colleges, they lean more towards your ranking and GPA because with so many students applying you're not really treated as an individual. Overall though AP tests are yours to take your own personal gauge. It doesn't hurt if you tried it and say got a 1. These tests are designed to be extremely hard. I got a 2 on Calc AB but got an A in College. The real course was actually much easier...actually it was very very easy. The only thing you will be losing is the amount of money you spend on the tests and the way tuition is rising these days I would just go for it. Besides, some schools don't even offer AP classes so it's not mandatory. Fyi look up clep tests to see if your potential university offers it, apparently these tests are all multiple choice and are alot less tricky and you can earn credit this way.
