If you think of making greetings cards - a nice one I bought had an origami frog on the front (there are several animals with origami patterns not too 3-D which are suitable). I have also bought, and made, pop-up cards, but they need very accurate cutting.

When I was a kid, I made little paper "tooters" (you inhaled, and they made a buzzing noise) and sold them to my classmates for ten cents each. Anything cute and tricky like that would go over great with kids. Look in the library for old "crafts for kids" books -- that's where I found how to make the tooters.

If you aren't looking to make a ton of money, another easy thing would be those fortune-tellers. You make the origami piece known as the "salt cellar" (it's got four cones in it, you put your fingers in it and can open it up two ways), then write the numbers 1 through 8 on the outside triangles. Do the same on the inside triangles (or chose fruits, whatever). The fortunes go underneath the inner triangles. Do you remember this game? If you used cool paper, stickers and fun fortunes, I bet you could make some money from this at a craft fair where there are lots of kids.

If it's simple, people will just want to do it themselves. Paper is a tough one because it's not durable, and people tend to buy things that are sturdy and useful. But you could try doing papier mache or paper cast figurines, or design your own cards. I have bought cards from a lady who arranges flowers on a scanner to look like fairies and dragonflies.

Or you could make handmade paper and sell it to scrapbookers. I've done well with that at craft fairs.
