Well, I assume we don't. I'd imagine we'd wake up if we did.
So...why don't we?

I have sneezed myself awake when I've had a bad cold or allergies. Not sure if I sneezed prior to waking, though.

When I had pneumonia, I coughed in my sleep a lot (my roommate told me).

That is a good question. Come to think of it...I have NEVER sneezed during the night while sleeping. Huh... Probably something to do with our body slowing down during sleep and not being exposed so much to allergens we breathe in while awake and our bodies are more active and more sensitive at that time to the things that make us sneeze. While asleep we kind of shut down a little and maybe that's why we don't sneeze from some sort of reaction that usually happens when we're awake. Never really thought of it...But we don't hiccup in our sleep, either. I hope nobody does, anyway. I don't know...our brain does weird things when we're asleep. It produces (sometimes) these chemicals that prevent us from acting out our dreams or from sleep-walking. I guess some people that sleep-walk, etc...are lacking some chemical that sort-of paralyzes us when dreaming. I'm glad we don't sneeze in our sleep. That would be horrible...to wake yourself up in the middle of the night...with some big, huge, loud sneezing fit. That would be kinda scary ! Just added: Oh, well...after reading others' answers, I guess some people DO sneeze while sleeping. How crazy...I hope that doesn't ever happen to me.

I've sneezed before in my sleep...the sneeze turned up in the dream I was having and it ended unpleasantly.

I'd say because our body is resting that's why we don't sneeze in our sleep

We do ha ha ha, I got proof, don't know Where it is, but its somewhere round here!!! Sis sneaked in my room with a camera (sh*t!) thought she might get something, interesting, I sneezed, GREAT yeah???

actually there have been times when my little sister is alseep and she sneezed many times.. when we're asleep we dont really know what we're doing so we assume that it doesnt happen but they do lol
