i just did a "slime lab" in chemistry and we are learning about cross-linked polymers- why does the glue need to be diluted? what would have happened if it wasn't? and what would have happened if there was too much water?

The water provides hydrogen bonding and better ionization of the glue molecules. The charges on the glue would not be as strong without the water to hydrate them and provide a stabilization of the charge.
