what do you call it when your acting and you make parts up as you go along?

Most people refer to it as Improvising, or Improv for short. It can also be called ad-libbing.

Making it up on the spot is called improvisation or improv for short ;-)

If two or more people are working off each others improv lines they call it "Riffing"
