You will have to wait until the '08s have been on the floor for a while. I haven't heard any scuttlebutt about any new innovations for 08 that would likely obsolete the 07's. Also complicating the cheap sale is the fact that R6's are the hot ticket right now. Usually if they have accesories installed on the bike, they will usually kick them in for free, but I wouldn't count on anything being ordered as a possibilty.
Your best bet for good pricing is to walk in the dealer with greenbacks totaling 10% under MSRP (for total OTD price) and say this is what you have and your credit isn't good, can they make a deal, more often than not, they will help you out.

You can talk him down anytime you are ready to make a serious offer. My local dealer had already sent out a sale flyer with certain sport bikes marked down $1000+, so you don't need to wait until the 08's hit the floor to get a good deal. To be honest with you, I'm not sure why you want the R6 anyway. Have you seen the dyno comparison and reviews with the other 3 600cc sport bikes? The R6 was consistently 5+HP lower at every RPM until about 13,000 versus all 3 of the other bikes. From 13,000 up it was the leader, but you are only talking about 3,000 RPM's that at best is usable at a racetrack not on the street...it's a poor daily street rider at that price...and its not like its the only bike with a slipper clutch (Ninja and GSXR have them too).

i bought my 2006 R1 in Nov. of 06. MSRP was $11,995. Dealer wanted $11,000. I Paid $10,000. ($10,7-ish OTD).
Your talking about a $1,000 savings on the Motorcycle purchase.
My advise as an owner of a brand-spankin'-new R1...
...search you local classified adds for one for less than 2k on it, an prolly get it for $3,000 under MSRP...
Good luck and keep the rubber side down.
(Oh, and unless the aftermarket items are already on the bike, i HIGHLY doubt a dealer will just 'throw them in')
