San Diego, CA: Sea World, lots of beaches, Wild Animal Park and Zoo.
Anaheim, CA: Disneyland (as usual), Lego Land, Knott's Berry Farm, many water parks and Six Flags Magic Mountain.
Las Vegas, NV: Yes, there's stuff for kids to do. Lake Mead, Bonny Springs Old Nevada (petting zoo, old west stores, games and shows), The Springs Preserve, Adventuredome at Circus Circus, Tournament of Kings at Excalibur, Show In The Sky at Rio, Mandalay Bay Shark Reef and Mandalay Bay Beach, Flamingo Wildlife Habitat, M&M World (including M&M movies, they're really cute) and Grand Canyon Experience (on the strip, huge arcade, rock-climbing wall and restaurant. There's even a bar upstairs for mom and dad!)
Just some fun stuff to do on the west coast, hope this helps!

Do you know about the emerald coast? Destin and the Sand Destin area. I am from Auburn, AL now living in Dallas and driving there Thursday for the 4th next week. I am traveling with several 5, 6, 7yr olds and two small children. Nice beach atmosphere and can get really good rates!

Our kids (7, 4, 2) love scenic railroads! They are the perfect activity because the kids are still too small for a lot of outdoor stuff (hiking and biking) and often too young to get into history and museums. The railroads are a great mix of active and passive recreation for the kids (and they often end up taking a little snooze along the way).
Our favorite was Cass Scenic RR in West Virginia, but there are plenty of others too.

Don't know where you're from, but have you tried
the state parks in KY. They have camping both RV and primitive (for tents) fairly cheap. Some places have horseback riding that the adult can ride with child. Try Carter Caves State Park in Carter Co. They also have caves and hiking, can ride your bikes or trikes on campground, and have a swimming area with kiddie pool. Also, have fishing there as well. Oh! and playgrounds.

Take them camping to a National Forest or near a National Park like Yosemite or Grand Canyon.
Lots of family togetherness mixed with nature learning and experiencing new things.

We took our girls to Hershey Park last year they were 6 & 7 years old.Its really nice and family oriented. They loved the rides up there. And so did we.The best way to find amusement parks is look for the city you want to go and then find the park that is there you want to go to.When you decide on some parks compare them on rides and prices.Look for the height restrictions and see what rides your kids can ride. This year we are going back to Hershey Park and we are also going to Kennywood. Our girls are 7 & 8 now. They cant wait to go back to Hershey.Decide where you want to go and then compare.Thats the best way of doing it.

it really depends where you plan on traveling to. if you're going to california you could definitely take them to the theme parks or you could visit museums, the california science center(LA), the exploratorium (San Francisco) .. but i would definitely narrow my search down to a more specific place then research on the internet about touristy sites about the area.
