I'd say William Shakespeare. He wrote over thirty plays, a couple of poems, and a hundred and fifty-four sonnets -- talk about prolific. Plus, he seems to be the most celebrated writer all over the world -- his plays are constantly being performed in theaters, and his works find their way into most students' curricula.

I'd contribute both Georges Simenon and Honore de Balzac, both really gabby French guys...volume-wise, they're probably up there as to novels. Run a google on either name and search for 'bibliography' and you'll be amazed!
