I pour the coals out when I see flames out the top and the charcoal briquettes visible on the top are at least half white. This means the briquettes are well lit but are not cooling down yet so that I have plenty of heat to finish my BBQ.

When the coals get a good portion of them to a gray color. This shows that they are actually "burning". Remove from the chimney and spread out on the bottom of the grill and let them get fully gray.

15 minutes after you light it. The flames will be barely visible.
