There are two answers pertaining to this question: the Aesthetics answer and the Function answer.
Aesthetics: Just like the song, “Ain’t nothing like the real thing, baby,” wainscoting started as wood, and despite their benefits, plastics and MDF simply imitate the “real thing.” Hence, asking this question, at least from an aesthetics perspective, is like asking: “What’s better – Real leather or Imitation leather? My preference would be the former.
Function: Sure wood is beautiful, but there are some new plastic and MDF wainscoting products on the market that have vastly improved on the “paneling” look that some of these products once had. More to the point, they’re more practical and cost effective than wood. In a high-use, high-traffic, or humid room, you may be best served going with a good quality MDF or plastic product. As mentioned, some of these products look great and they’re less porous than wood making them much easier to clean when kids get rowdy and messy in the kitchen. Additionally, unlike some types of wood, they won’t warp in high humidity rooms such as bathrooms and basements. As a traditionalist, I mostly restrict my recommendations of MDF and plastics to high-performance, less formal areas, such as kitchens, baths and basements, and I recommend wood for all else. In my opinion, Wood Wainscoting, especially oak wainscoting, looks more elegant than plastic wainscoting. but in certain areas such as a bathroom - of course, plastic wainscoting is better. I can provide you some useful wainscoting blogs and I'm positive you'll find them interesting.

Wood is better by far. You have many more finishing options with wood - clear seal, stain and varnish, and paint. You also have better durability - it takes impact better.

As far as not being as good in bathrooms - unless you are planning to line a shower with it (something that is definitely NOT it's intended purpose) then it will be just fine. Most wood wainscot is made for outdoor applications - with proper sealing of course.

In my opinion, wood is better but, I am partial to using wood for the beauty of the wood - plastic just looks cheap to me. Your personal taste, your budget, and what your plans are for the wainscoting will ultimately be the deciding factor in the product you use.

If you are going to stain it then of course you need to use wood. If you are going to paint then I don't think you can tell the difference between the real wood and the fake stuff. Most of our house has crown molding. Some wood, some fake and I bet you can't tell which is the real stuff. If you have a high end house, you would want the real deal. I have always gone with real wood, being a carpenter all my life. If you go with wood you can paint it any color you want or, stain it.
