1. Give them a quick shake next to your ear. The old ones will have a definite 'slosh' and the fresh ones won't.

2. Spin them on a flat surface. The fresh ones will spin smoothly and the boiled ones will 'wobble'

3. Water flows downhill, or from higher to lower elevation.

1: Put the eggs in water. Fresh eggs will sink, old eggs will float. The eggshell is porous, and over time the contents of the egg lose water from inside through the shell. In turn, this causes air to enter the egg (there is an air pocket at the bigger end), because the hard shell prevents the volume of the egg itself changing. As a general rule, once an egg has enough air in it to float in water it is past its best.

2: Spin the eggs quickly on a flat surface, then grab them to stop them and release them again immediately. Because the contents of the fresh egg are liquid they will keep on spinning for a while, and this will cause the egg to start moving again once you release it. Because the inside of a boiled eggs is solid it will all stop spinning once you stop it, and it will not start again once you release the egg.

3: You put the water tank at the top of the house because if you don't put the tank of water above the level of the tap, it won't flow. Think of a watering can: water only comes out when you tip it enough that the top of the spout is below the level of the water in the can. Water won't climb the spout to get out, nor will it climb the pipes to come out of an upstairs tap if you put the tank in the basement. If you put the tank at the top of the house, gravity forces it out of the taps below.
