I have dozens of patterns and would like to make some of the projects but cannot find plastic canvas anywhere. I live in Melbourne.

I think I have seen it in Spotlight. Might be worth a look if you have a store nearby. Lincraft probably sell it as well.
Check in the section that sell Cross Stitch kits.
