They are kept in a cooler, and you get your beef fresh off the grill. They don't store meat for later like some places. What gets too well done is ground up and used in the chili. Good food, but I hated working there.

In-N-Out has been doing that since the beginning. In fact, they have no freezers or microwaves on the premises.
I surmise local supply lines, no need for cross country transit. daily deliveries, refrigerated trucks and they sell so many burgers there is no need to freeze them.

They cook it right when they get it so its fresh, but then they refrigerate it. That way when you order it they heat it up again and its fresh. Lol!

It is refrigerated, just like in the supermarkets. They use so much of it and get shipment so often, it does not go bad on them.
