Because God created all things and that was His choice-same goes for anything with color, including people.
Of course mankind can genetically alter colors, fragrances,etc. but I was born before they could do that and eggplant has always been purple.
While people of different races can marry and their color is altered to some degree, their DNA will show their origin.

Why is anything purple?? I'll tell you why, because it is the best! Eggplant is fantastic which is why it is purple.
