What is it? and why are they used in hotel and also what are the benifits of a manual advanced booking system

'Manual booking' suggests 'write it down in a Diary' .. I do not think any real Hotel in UK would still be using a manual booking system :-)

It's used so the Hotel can book rooms for guests in advance = in this way they will know what vacancies they have and can decide to accept a new booking or offer a discount :-)

Main benefit of a manual (as opposed to computer based) system would be that its (usually) easier to see 'at a glance' how many bookings/vacancies exist .. and (of course) the handwriting gives away who took the booking ..

Other advantages are just the normal 'pen & paper' V computer ones (a manual system can be used during power cuts, does not crash & won't 'loose' data if someone clicks the wrong icon/presses the wrong key, is not subject to virus attacks - and may well have a (much) better UI)
