Usually the county sheriff or local police will stop and shovel the dead animal off the shoulder, far enough into the grass so it will be out of sight. That way it will be carrion for birds and recycled into the environment.
A larger animal like a deer, or if the animal is killed in a more populated area may be rolled onto a tarp and put in the patrol car's trunk for disposal in a more rural area.

When an animal crosses the road and a car hits it, it dies and become road kill. Normally, there's some roadkill patrol person or something that goes around every so and so days picking it up or throwing it off the side of the road.

Small critters are soon removed by scavenging critters. The highway department removes the larger ones like deer carcases or covers them with slaked lime and a tarpaulin until the carcass has decomposed, leaving only bones, which are then scooped up and sent to the landfill.

It becomes a Big Mac. Actually, if you're serious, I had a freind who worked at nights picking up roadkill from the highway. It gets removed and probably dumped out into the woods.

My Hubbie says that roadkill is coated in batter and served as school dinners!!!!
It tends to get eaten by other animals. Over here there is a rule if you run something over you are not allowed to take it away and eat it. However the person finding it is allowed to take it away. Who say's that the English are strange!

It depends, the city will come by and pick it up OR birds will just pick at end until it is gone. Or worse, it is on the menu at a nearby diner.
