A normal plane'll go something like 30,000 feet in the air. The height of an ipod has nothing to do with its performance. In fact, you could turn one on in the void of space.(However you wouldn't hear anything due to the lack of air in space) but aside from that it would work fine.
The only time you can't use an ipod on a plane is during liftoff and landing, I believe. But that is for a reason completely unrelated to altitude.

Not only an iPod but any electronic devices can be used during the flight. You only have to switch it off during take off and landing. Be attentive to the announcements of the cabin attendant.
