If you have a lot of food experience think about what you have accomplished at the other restaurants. Did you help increase sales? Did you help pass an inspection? What new ideas did you bring? And be able to tell them how customer focused you are. I used to be an assistant at kfc and i know that is the same company as taco bell. I know the whole company has this thing called CHAMPS. It stands for cleanliness, hospitality, accuracy, maintainance, product, and speed so if you think of these things to talk about then you will be fine! Don't listen to these people they don't know that when you get to the more full service restaurant management level (such as longhorn steakhouse, fridays, etc.) the pay is more than what they probably will ever see! You mean there's a Taco Bell in Midland as I don't think they even supplied one in Midland Odessa for that matter. I don't even think they put one in Abilene, about the next sized city up, and that would be about 4 hours away if traveling by speed limit. By the way... That certain politician is Florida born, not Texas born and he has doesn't pronounce it talko, he pronounces it take 'O.

introduce yourself,be very clear when talking ,try not to show that you nervous.
let theme know you work good with people ,throw a phrase in like ,you have time to lean ,you have time to clean ,it shows you are serious ,and that you will work hard .
eye contact always ,and be early for the interview ,i never hired someone late ,or just on top of the time .
good luck.
it helps if you bilingual also .
let theme know all your experience's ,even if it's not many .
expected pay ,leave it open ,don't ever set a price ,and your hrs available also ,and don't ask for time out ,at least for a good 3 month's .that's your probation time ,employee's barely mention the 3 month rule.

They'll probably ask you why you want the job. Don't say "It's a job and money." Come up with something better about furthering your career.
And how well do you know how to do books? An asst. mgr. is going to have to do a ton of paperwork on top of supervising.

I would prepare a resume, with your management experience. List your experience mainly with training team members, customer service. Personally I listed my experience in the food service industry, they would like to know your experience with customer service, ask you for feedback on how to control the food expenses, labor expenses, and store expenses. I would be prepared to answer any questions related to business aspect of the business.

Just go in there with an "I'm willing to learn and do the job" attitude. It's true, a monkey could do the job, but doing how they want you to do it, that's where the monkey would have trouble. So, go get'em monkey, I mean tiger.

Know your tacos and other foods... how much per serving etc.
Know what is involved in setting up a work schedule
Know how to deal with a teenager who is belligerant because he has to work, doesn't want to work... and he's behind the counter serving customers food with spit in it.
