You're not specifying what rules or operations we're allowed to use. I'll assume the standard four arithmetic operations (+ - × ÷), with bracketing and normal order of operations, and reordering of the numbers is allowed. If some of these assumptions are incorrect, please say so.

1 + 5 + 3 + 6 - 10 = 5

8 + 11 - 9 - 1×8 = 2

11 + 10 - 20 + 15÷3 = 6

18 × (12-12) + 11 - 3 = 8

16 - 4 - 10 + 24 - 25 = 1

(14 + 13)×(17 - 17) + 7 = 7

(10 - 3 - 6) × (7 - 5) = 2

21 + 8 - 6 - 11 - 5 = 7

17 - 6 + 1 - 2 - 2 = 8

11 + 9 - 10 - 4 - 1 = 5

1) 1+5+3+6-10=5
2) 8-8+11-(9 x 1)=2
3) 11-(15+20-(3 x 10))=6
4) 18-12+3+11-12=8
5) 16-4-10-(25-24)=1
6) 7 x (17-17+14-13)=7
7) (10-6-3) x (7-5)=2
8) 8-(5-(21-(6+11)))=7
9) 17-(6+2+2-1)=8
10) 10+9-11-4+1=5
