in science we are doing astronomy and my teacher was talking about the Sun and then he mentions Super Giants, how did scientist found out about them?

Astronomers have been studying stars for a very long time. By carefully analyzing the light from them scientists can learn many things about them, including how much light they give off. By determining how much light the star gives off they can tell its size. Generally, the less light is given off and the more red-colored it is shows them that the subject star is a giant or super giant.
