For sure you can transfer whatever you want via network, USB memory key, external hard drive, etc.
You are probably most concerned about whether those files you transfer will be able to open under Mac OS X or the upcoming Leopard.
Answer is yes.
All media files on a Windows machine will be able to be opened on a Mac machine. Most common files like mp3, avi, etc. If you have any problems opening a media file VLC (www.videolan.org/vlc) media player which is free and also ad free is a great program to open those codec bloated files for Win/Mac.
Productivity files is a more difficult thing. If you have MS Office files that you want to work with from Win to Mac, you will need to buy MS Office for Mac or use the free Open Office (www.openoffice.org). If you are going to get MS Office I suggest waiting until MS releases Office for Mac 2008 (http://www.microsoft.com/presspass/press/2007/jan07/01-09MacworldPR.mspx), and use Open Office for the time being.
As with MS Office, any other programs you use frequently which create files that you save will require a program that also runs in the Mac environment.
But all is not lost. You can install Windows on a MacBook if you so desire with Apple's BootCamp software (www.apple.com/macosx/bootcamp), or wait for Leopard to reveal hopefully virtual booting to Win inside Leopard itself.

Yep, it's definitely possible. If your old PC has a firewire drive then just boot your new Mac into Firewire drive mode (restart and hold down T until you see a big firewire symbol on screen) - this basically makes your Macbook an external hard drive. Then plug it into your PC and transfer files to the Mac's drive.
If this isn't possible for you for any reason, you'll have to copy the files to an external drive and then again to your Mac. OR, you can connect them both to the same network and use file sharing to transfer them (really slow though). All the documents and files will be just fine, but you won't be able to transfer your applications over.
Best of luck.

Of course it is! As long as you have a compatible program to open files on your Macbook from your Windows PC. If you're really conscience of loosing files in this process, I'd recommend waiting until Leopard is released so you can run Windows on your Macbook. Sure, there is a public beta out for Tiger, but this is only for a free-trial basis.

There are a number of ways to do this. I would first go to the Apple web site and look for ways, I will save you the trouble and give the link here:
http://www.apple.com/getamac/movetomac/ipod.html
It says to use your iPod on that page but if you look on the tabs there is another solution by using your networking. The other tab of course says take it to an Apple store.
One other solution I found was if you aren't afraid to throw some money on the table there is software like this one here:

That is all I have for you, I hope this helped :)

Yes, you can copy all your personal files to CD, then copy to the Mac.
OR
In OS X, set up Windows file sharing in: System Preferences > Internet & Network > Sharing.
