If you read the fine print, that may explain why it is not pricing quite as low as advertised. I'm not sure how long you are pricing, ages of kids, tickets, etc. so that could make a different in price. Here is the fine print:
"†Walt Disney Travel Company price based on 2 adults, 1 junior and 1 child occupying one standard room from 8/27/06 - 12/19/06, 1/1/07 - 2/14/07 and 4/15/07 - 12/19/07. Not available for all arrival dates. 7-day Theme Park admission must be used within 14 days of first use.
††Walt Disney Travel Company price based on 2 adults, 1 junior and 1 child occupying one standard room from 8/27/06 - 12/19/06, 1/1/07 - 2/14/07 and 4/15/07 - 12/19/07. Not available for all arrival dates. 7-day Theme Park admission must be used within 14 days of first use."
I'm not 100% sure, but I'm pretty sure that the advertised price does not include tax either. So, the price they give is for value season, with two adults, one child over 10 and one child under 10. Also, I believe they are pricing it with a base ticket, so if you have hopping, or the waterpark option that would increase your price as well. If you have dining included, that could be the issue also.
They advertise these packages at the absolute lowest rate you will see, for most situations it does not happen to be that low.
As long as you are pricing a date during the time frame they list, you should get the lowest rate. You want to go during value season, which is the lowest season. This is also when they will have the best promotions, i.e. free dining in September. When you figure in the promotion, it usually is about what they advertise, and in some cases a little lower.
As far as checking in on certain days, Disney has the same pricing for every single day during their value season, regular and peak season. So if you stay on Saturday, or Wednesday, it is the same price, as long as you go in the same season..... Hopefully that makes sense. But Disney is not like most hotels where you are charged more for busier days, just busier seasons.
I hope this helps!

It depends on what you're trying to book. The $1600 is usually a week at one of the All-Star resorts with tickets that don't include the park-hopper / dining option / waterpark option. If you choose a moderate or deluxe resort, and / or include the park -hopper / dining option / waterpark options, that raises the price.
My husband and I took our 2 year old granddaughter last December for 9 days, stayed at the Coronado Springs resort, got the park hopper and dining options, and paid $2100 for the package. We're going in October this year, staying at the AK lodge (with a savannah view room), added the waterparks, the dining option, the park hopper and are only staying 5 days, but it's $2500.

It might depend on the time of the year and how many nights you are doing. I believe at the bottom of those commercials it says 5 nights 6 six days (I could be wrong). If you are asking the price for 6 nights and 7 days the price is going to go up. It also depends on how many children you are taking and their age. I would call (407) 939-7675 and ask them. They are very nice.
Good luck and I hope you get to go on your trip!

I think that's only for the month of August through November and only at certain times.
I wouldn't doubt if its already booked up and you can no longer get that option.
