Blue Bell Chocolate Decadence. Ahhh, but alas, they either no longer make it or no longer sell it up this far north. I have to settle for the classic Blue Bell Homade Vanilla. Then top it off with some Jiff peanut butter or some cinnamon sugar.
Double alas! All I have in the freezer right now is dutch chocolate, pralines and cream, mint chocolate chip, cookies and cream and butter pecan. oh and lime sherbet, but that doesn't really count.

Call me classic, but I love Mint Chip. It's simple, yummy, and plus you can add chocolate syrup if you really wanted to. To me ice cream doesn't need to be all that complicated or overly dramatic. Heck, I would settle for a GOOD vanilla ice cream and be happy as a clam.
