You can't. Vampirism is a myth based on a blood condition known as porphyria (a rare form of anemia where your blood's plasma levels are low). People who have porphyria are sensitive to light, get really pale and can't eat garlic because of unwelcome chemical reactions. They also have swollen gums. Remind you of something?

I think it just wards them off; doesn't kill them.
Edit: Garlic repels vampires because it has long been associated with health and life in general. One theory is that vampirism can be seen as symbolic of mosquito bites - and garlic is known in folklore as a natural mosquito repellent. Mosquitoes suck blood and in doing so spread disease. So do vampires. Some of the symptoms of malaria - exhaustion, fever, anemia - are reminiscent of the reputed effects of being bitten by a vampire without being totally drained or turned. Garlic is a known insect repellent which reportedly works well against mosquitoes. This would fit well with the vampire folklore and gothic fiction.

I was told that what was assumed to be a vampire was a person with rabies and the strong smell of garlic and/or the bright sun would drive them off in a rage, over stimulus and all. Plus garlic prevents coagulation; you would think that’s what a blood sucker would want

Bram Stoker was hitting the wine pretty heavily when writing Dracula and the Italian dinner he was served one night was loaded with garlic. He said that the food was strong enough to kill Dracula, and wrote it into his book.
