I'd have to say the ending of the 1968 version of "Planet of the Apes".

The end of "A History of Violence" when he just shoots his brother. No long drawn out speech, just blam! The final scene of "Saw", where Jigsaw sits up from being in the room the whole time. Excellent cinematography and excellent use of score.

Without giving away anything, one that I liked was the end of "Dirty Mary, Crazy Larry" (1974).
"Seven" also.
