Good question. I would hire a widely-used linen recycling service (one that drops the linens off, cleans it for you, and brings it back for you) and seek them out for advice on what typical restaurants your size use. If you find a good established company, they will have this info and will be happy to share it with you as a partner for your business.

I am not 100% sure what you are asking but I would make sure that all my staff always had a clean apron and the tables were exchanged after each person for fresh linens.
The towel in the bathroom I would have the air kind or the towel that you wave your hand and it gives you the amount needed for one person because it will keep your bathroom fresher.
In the kitchen you need to make sure there is a place for your kitchen staff to wash their hands frequently so I would also have an air dryer for them back in the back.
The girl that said get a linen company to wash and send you new fresh linens is on target as well.

I would hire a linen service to deliver, clean and pick uo dirty linen. Depending on the size of the restaurant and popularity I think service every other day sounds good.

Keep in mind linens are one of the biggest expenses to a restaurant.

I used a linen service. Aprons and rags and dishtowels were exchanged out whenever they got too dirty. I didn't have to worry about tablecloths, I had vinyl ones.

I think a nice bottle of champagne is always a safe bet & depending on how much you want to spend, the price ranges can go from under a hundred, to hundred of dollars
