Many, many good bands use them. Unfortunately, i do agree with what another person said about them getting drowned out by the vocals or other instruments. For some reason in the 70's, and early 80's, it wasn't cool if you were a rock or metal band and used keyboards.
A few I like are:
Black Sabbath
The Doors
Marilyn Manson
Nine Inch Nails
Orgy
Apoptygma Berzerk
Pitchshifter
Juno Reactor
Fear Factory
The list goes on and on, but those are just a few of the ones I like you could try.

I can't agree more with a lot of what has been mentioned already, YES (and Rick Wakeman solo's stuff too, such as "The Six Wives of Henry VIII"), ELP, Deep Purple...
Niacin. They sound like they might use a Hammond B-3 organ. Niacin is sort of like the sound of Deep Purple / ELP.
Let's not forget the recently deceased Billy Preston, but you have to like funk if you listen to his earlier career megahits.
I know this is the rock section, but I love jazz too, and there is lots of good jazz out there with organ. Try these artists.
Joey DeFrancesco, Dr. Lonnie Smith, Jimmy Smith, Richard "Groove" Holmes are some of my favorites.
