When you type, sometimes and just sometimes, instead of writing in what I want to see in betweem words, I delete while I type.. How can you configure this?

It is called Overtyping and is usually toggled with the Insert Key. Almost all software today defaults to Insert being on with words being pushed apart to take the typing. Word puts OVR in the bottom of the frame when Overtyping is on.
The problem with turning OVR on is that half the time you forget it and type over something you didn't want.

press the insert button
near the backspace and delete keys
