Because it gives people more to talk about.
Not that they need anything good to say, either way, but just so there will be something for the breakfast table.
We live in a large fantasy. People on both sides of an issue feel that it has to be their way or it's wrong; it livens up the conversations and that's good.
Hopefully, one of these days there will be a 40-years war that lasted only 6 days.
That should really give people at the local pub something to swing back and forth.

You think the 6 day war was the beginning? Try 1895. This goes back 107+ years
The 1973 October War almost got us involved. That was when The 7th Army began preparing. In April 1974 I was painting vehicles desert camo in Germany. It took 9 years until we were in Lebanon and the 1983 Marine Barracks Bombing.
It's all about hating Jews, dictators, hating themselves, dictators. In all this time only Israel and Turkey built an economy for it's citizens, they hate that too. Now Fatah and Hamas hate each other. Arafat got rich and Palestine never got a real govt. just weapons and hate. Iran arms Shiites, someone is arming the Sunni's, whats the common ground hate. 9 year old boys packing AK47's. Kids strapping bombs on to blow up a pizza joint with their parents best wishes.
What an education system they have. A model for us all.
I would say the world has been very patient, tried many things including arming them into self annihilation. They couldn't even do that. So far as I can see hate is winning.

OK in all seriousness. The Palestinians will not stop. Israel severely restricts their response. Most of the time only one side (the Palestinians) are fighting the War. In order to have peace, and a working government, the people have to want to have peace and a working government. The Palestinians want neither. The Israelis have the most successful Economy in the region. Peace is a two wa street. Israel has bent over backwards offering peace, but the Palestinians don't want it.
