Why can't we come back with the knowledge of things we learned the first time..or however many times there were?

absolutely.....
and I believe that subconsciously we do remember the lessons that we learned b4. We just don't realize we remember....that's why we experience dejavu (i know i spelled that wrong).

I just wish that I could learn what my most interesting past life was.

Well, I believe that if you are reincarnated, you did not reach nirvana in your past life. What would be the point of having all of your previous knowledge if it didn't help you to achieve your purpose? Each cycle of rebirth is meant to give you another chance to attain nirvana. If you don't find enlightenment, then you will be stuck in samsara forever.

I believe that each life we are given, we must relive the past mistakes we have made to have yet another chance to make them right.

When we fail, we are destined to do it over again until we can finally see our way clear to that which is right, and further our path towards enlightenment and true oneness with God.

i believe in reincarnation. If God gave us free will, why couldnt we come back if we wanted to? Besides i think it would be boring if we couldnt.
