I know it was the theme music to a Western. But is there any significance to the saying. In other words was the rose a girl or a plant in Texas.

there are many versions of the yellow rose story, though all seem to be modern.

louis rose was one of a very few defenders of the alamo who fled rather than face the advance of the notoriously incompetent general santa anna. according to the slang of the time this would certainly have made him a 'yellow rose of texas'.

A song based on a Texas legend from around the Texas War of Independence. A free African American woman Emily D. West takn by Mexican forces during the looting of Galveston, seduced a General of Mexico and commander of the Mexican forces, who she seduced and facilitated the Texan victory in the battle of San Jacinto in 1836 . Santa Anna's opponent was General Sam Houston, who won the battle in minutes, and with almost no casualties.

This legend has been compared to the Biblical war story of Jael and Sisera, Judges 4:14–22 and repeated in poetry in Judges 5:23–27.

It is based on the legend of an African American woman, captured by Santa Anna. She supposedly delayed Santa Anna in his siesta tent long enough for Sam Houston and his Texican army to overwhelm the Mexican troops who were having a regular siesta awaiting their commander.

It's a shame how wikipedia is so relied upon by folks and so wrong on so many occasions.
