In Yahoo leagues,five starters and five relievers is ideal. The starters are rotated between SP and P. Pitchers go lame more often than position players, so start with a full boatload.
That leaves two other bench players. I like to keep an infielder that plays more than one position and an outfielder.
If I have an extra spot, I like to rotate players in and out to fill for days off or catch up on a category that I am short on.

Depends on your own playing style. Its always good to have backups in place of slumps and injuries, but if you like to utilize all your players and set your pitching rotation every day it may be better to have more pitchers. But again the same can go for batters, if you want to look at their stats against certain teams and pitchers, which would be quite a hassle day in and day out.
Personally, I keep more batters as far as prospects go and just to switch up certain stats that I need if its a Head-to-Head league. Having more pitchers pitch isn't always a good thing as you're probably going to see more walks and a higher ERA and WHIP for the most part.

I like pitchers in either roto or h2h leagues. In roto i often go with a couple extra bats and in h2h either one or none. That's assuming standard Yahoo roster size, and lineup. Ideally in a h2h league I use seven starters and four closers for my pitchers. My util player ideally is a 1B and my bench guy an OF. Roto only 5 or 6 SP, Ideally five and maybe three closers. Then fillin the last pitching spot or two with a talented non closing reliever who'll help in k's and have a solid era & whip.

In H2H leagues, you want more pitchers - more opportunities for Wins and Ks (although it can sometimes backfire and hurt ERA and Whip).
In roto, you probably want more batters because if you revolve too many pitchers you'll run out of innings and stop getting points. Roto requires more "quality" where H2H can be won with a volume approach.
This assumes default Yahoo settings for both types of play.

It is better to have pitchers. You can switch them out whenever they pitch and you can't for batting. Keep your bench batters limited.
