Why is it important that executive officers, both of the United States and of the several states, be bound by oath or
affirmation to support the Constitution of the United States?

The offices are Constitutional in nature, whether under the US constitution, or under the various state constitutions. An executive is expected to enforce constitutional provisions, and to protect the constitution form offenses. hence the oaths to protect and defend the constitution in oaths of office.

Besides, the elected officials draw their authority from the Constitution and therefore defending the Constitution defends the source from which they draw their power.
