I am going to assume you mean a fabric-covered roof as opposed to a convertible, which obviously costs more due to the extra parts and chassis reinforcements required to make an opening roof possible.

The most obvious answer is taste. Some people like the "looks" of a fabric roof and are willing to pay more for it.

The next question is, why do they cost more in the first place? The simple answer to that is they cost more to make, the canvas they use, the trim for the edges, the extra labor to install it, is significantly more costly than spraying a few ounces of paint on it.

I assume you mean a Landau roof (solid, hardtop with vinyl covering) as opposed to a convertible top.
