That is referred to as a "Vacation Response", an "Out of Office" or an "Auto Response" depending on the e-mail program you use. Check the menus or the Helps for it.

Not all e-mail programs (especially the free ones) provide that ability. If you repost with the email you use someone may be able to give you a step by step for the program.

its a vacation respone or out of office. what is your email program and that will determine how to do it. When you turn this on, you set up what the message will say and then when you're done, just turn it off
