The shoulder area. Trapezius and deltoids. By making the shoulders larger the waist will seem smaller, and you will achieve the "v" shape. Also if you can take inches off your waist while increasing the size of your shoulders you will look even more "v" like. Generally men in over all "good" shape with low bodyfat and a good amount of muscle mass will have a "v" shape naturally without "targeting" any specific muscles or muscle groups, but if a man naturally has wide hips and narrow shoulders, extra training of the shoulders while trying to take inches off the waist can help with the desired "v" shape. consult a personal trainer at a gym if you belong to one. Or you can learn more about physique by reading "The Encyclopedia of Modern Bodybuilding" by Arnold Schwarzenneger. I hope this points you in the right direction. But to put it as simple as possible... big wide shoulders and a little waist will give you a "V" shape. Good Luck!!!

Your lats. Your lats provide the "wings" coming down from your shoulders. Lat pulldowns can be good for that. You'll also need to work your shoulders and obliques.

latisimus dorsi or lats like banzai said. As he said pull downs also pull ups and rowing.
