I am not a car expert, so can someone explain the differences and benefits of each system? I know that electromechanical steering uses a motor instead of power steering fluid. What else is different? And why is that being used more now?

The reason the new system is being used more often is less parts and takes up less room in engine area.Older style power steering units are prone to leaks.
