Pick a subject that you are interested in and have knowledge of. Use this as you basis for your project and keep it simple..

So for example Baseball..... Develop you Excel project to compute the Stats.
One sheet has a roster, another sheet has data, and the third sheet has results.

Write you VBA code to read each player from the roster, get data from the second page and perform the calculations and write results on the third sheet....
