Apparently just mixing sugar and eggs invokes a nonenzymatic glycation reactions that 'cooks' the eggs without heating. Can somebody explain the details of such a reaction? -Thanks

'Cooking' eggs here means modifying the protein component of the eggs so that it resembles the mass produced on cooking.
