Glaciers don't really erode valleys like Yosemite, they carve them. Here are a few canyons that I can name off the top of my head; the Tuolumne river canyon, the Trinity river canyon and the American river canyon. I live in California and I have hiked up the Tuolumne canyon, driven through the Trinity canyon and rafted down the American.

And not all valleys are caused by water erosion - some are created by glacial erosion. some are rift valleys, caused by the sinking of a large section of land between two plateaus (e.g. Jordan River Valley is a rift valley).
