Ok so I have two betta bulbs that are growing, but they are just stalks and no leaves, I haven't had them very long- will they get leaves eventually? And how big do they usually get?

Yes, they will grow leaves eventually and probably before very long at all. What you have are called Aponogetons. They are a nice, easy to grow plant that often will bloom in your tank as well. How bg they get depends on what kind you have. Here's two links about them, the first is a great article and the second has some good pictures of different Aponogetons, you may be able to tell what yours is once it gets a few leaves.

They're likely Aponogeton plants. They will eventually grow leaves; it may take a few to several days.
