You'll have to check your owner's manual. If your unit is fairly new then you can't bypass the sensors without getting into some circuit board re-routes. By gov't regulations, all residential units are now made so that they will not function fully without the presence of the sensors. Photo sensors are only optional on commercial units presently. The only option would be to buy a replacement set and mount them in a place where they can't get knocked around if you don't want them at the bottom of the tracks.
Notice: we do in no way advise end users to relocate safety sensors as this is a safety hazard and may also void any factory warranty.

See if you can clean the 'eye' and reflector, and make sure they are aligned properly.
If you have children I would strongly recommend against bypassing this safety feature.
If safety is not an issue, then yes, you can remove it from the system -- your owner's manual should have the info on that.
Good Luck

Yes, but it is a VERY BAD idea to do so.
If you have pets, or children, DO NOT bypass the safety feature.
By a replacement sensor.

I don't know about bypassing it but mine has sometimes gotten out of alignment and adjusting it caused it to start working again. Sometimes they also need to be cleaned with a soft rag.
