The last interview I read, she was very clear that she is finished with the H.P. series.

No. She's been very clear about it. HP and the Deathly Hallows will be the last HP novel. Later she might publish a few encyclopedic books about th eHP universe with the proceeds going for charity, like "Fantastic Beasts and Where to Find Them" but she has stated clearly in Interviews that this will be the final book in the series.

What she will put out is a mini book. She did this with Magical Creatures. It is a small book that describes some of Hagrid's favorite creatures. There was another one similar to that, and while they are tied to Harry Potter loosely, they are not a continuation of the books.

i dont believe that she is because in her last book, it seems like she was beginning to pull it all together and fill in the gaps. if she continues, she hasn't got much to talk about cause we know most of it and it wouldn't be as good a read
but i might be wrong so we'll just have to wait and see!

I'm sure she's going to continue writing, but probably not - at least at first - Harry Potter.
