The Lorax - the voice of the environmentalists, the Greens
The Once-ler - the greedy capitalist destroyer of nature turned recluse and guilty of his crimes
Thneeds - the product made from the Truffula Trees (lumber)Truffula Trees - any trees harvested for human use
Brown Barbaloots - any animals which are endangered by deforestation
Swomee Swans - any birds which are endangered by air pollution
Humming Fish - any fish endangered by waste emissions in the water
Gluppity Glup - any waste products, not biodegradable
The Boy - the generation(s) that come after the Once-ler
Unless - the call to do something in defence of the environment, hope for a cleaner environment
Grickle Grass - wild, uncultivated grass, weeds
Smogula Smoke - air pollution
Truffula Seed - the chance to recreate a better, cleaner environment

You may be over analyzing this one. Dr. Seuss books are not usually overrun with deep symbiology or metaphors. The Lorax is a simple tale of the dangers of consumerism and pollution. The trees are trees, the grass is grass, and while the consumer goods (thneeds) and the animals have creative and zippy sounding names, they are just stuff and animals.
