my shibunkins are yellow and the other one is orange with black spots.

The only really reliable way to do this is seeing the fish when they're in spawning condition. The males have white bumps on the covers over the gills and along the front edge of their fins (this looks a lot like ich, so be careful you don't get these confused). There's also a difference in the appearance of the vents at this time - see photos in this link to see examples of both features: http://www.bristol-aquarists.org.uk/goldfish/info/sexing-fs.htm The fish will need to be 1 1/2 to 2 years old before the fish will be old enough to spawn.

Some people will also suggest "chasing" behavior, where males will chase females, but if another female isn't present, a male will chase other males. Body shape, fin shape, thickness, or a mid-line ridge, are also used, but these aren't reliable indicators. Not all fish show the "right" characteristics and different body shapes developed by breeding only adds to the difficulty. You should look at lots of fish where you know the gender, or have several individuals of the same species before even trying to use these methods.

Yes you can tell by their gill plates, males have a bunch of pimply white dots all over the gill plates and the female may have none of those pimples, or she may have 2 or 3 of those bumps. If they are in a pond it is easy to tell in the spring due to mating season.

In all the fish species I have dealt with, the males are longer and skinnier (more streamlined looking) while the females tend to have a more rounded belly.
