Starter- Fish/ shrimp/scallop Ceviche- and present it really well. Depending on the level of skill you are expected to show, start with a whole fish and fillet, or buy ready-filleted fish, just make sure it is very fresh. In your timing, start the process off at the beginning so the fish marinades properly.The dish includes citrus juices for the fruit part, and you can add fresh chopped tomatoes ( also a fruit) and coriander ( cilantro). The next ( palate refresher) or last ( dessert) course can be a sorbet ( mango, lemon strawberry etc,) as long as you have an ice-cream maker and freezer in the kitchen.Slightly risky in 2 hours, but it can be done. Then you can concentrate on a main course- could be a Moroccan dish, as this cuisine often uses fruit, a french classic such as duck with orange or rabbit with prunes, a Caribbean or Mexican dish that includes a fruit salsa- many choices! You could also offer a fruit- based drink or cold soup ( would this be permitted in the exam?) such as Pimms, gazpacho ( tomatoes!) or fruit milkshake. Get your timings right and you will provide a skilled feast within the time limits- good luck!

I don't think it will taste to good but whatever floats your boat. but if you want to try something lite and low in cholesterol try Baby oil instead.
