The throwing of the bouquet is a tradition. It is just a fun thing to do. Supposedly the one that catches it is going to be the next woman to get married. That's why it is restricted to single women. The bride turned around is only making it fair...

As above,its the custom and the winner is the next to marry but no one answered your other question,why backwards?,so the bride cannot choose who catches it,its then a fair game.
